There’s cookie dough in the dairy section of most grocery stores. It’s cheap, easy, and convenient. It’s also a bit wasteful. They come wrapped in single-use plastics, either with sprayed paperboard or small staples with the packaging as well. Luckily, small batch cookies are a great alternative.
Small batch cookies do require a bit more effort than the store bought alternatives, but they are worth it. They can be easily made with ingredients already on hand, helping to use foodstuffs one already has. They use few enough ingredients that they are able to be prepared without really planning ahead for them in a stocked kitchen. And they tend to taste better.
Here are a few awesome recipes for small batch cookies:
3 ingredient peanut butter cookies. This is one of my favorite recipes of all time. I always have the ingredients on hand, in the right quantities, and they come out perfectly every time. I usually add a little bit of baking powder and vanilla. Plus, they are gluten free!
Chocolate chip cookies, Land O’ Lakes or Genius Kitchen. I love a good chocolate chip cookie. Both of these recipes make an awesome base for any goodies you want to mix in besides chocolate chips. Dried cranberries and walnuts make a delicious add in here. (Full disclosure, I always add a full egg when they ask for just a yoke. I hate separating eggs. I know the recipe probably is better when you follow it directly, but I’m trying to be transparent here.)
Sugar cookies. Delicious and timeless, few things are quite as decadent as a good sugar cookie. This recipe makes drop cookies, but can be easily modified for roll out cookies. It’s delicious and goes well with a good cup of tea.
Oatmeal cookies. Classic, comforting, and sometimes a little disappointing. There’s something nostalgic about them, and something that reminds me about being misled about what I was getting. I enjoy them a lot as an adult, but there was something about getting one as a child that still stings. This recipe hits all the right notes of the best oatmeal cookies.
No Bake Cliff Bar Style cookie. I love energy bars like this. This recipe lends itself to infinite options, and every combination I’ve tried is amazing. It’s easy to do and the finished product is just too good.
